Catfish Ceviche with Fresh Vegetable Salsa
2 12-15 Southern Pride Catfish Fillets
1 Red Onion-cut into julienne
1 Red Pepper-cut into julienne
1 White Onion-cut into julienne
1 Green Pepper-cut into julienne
2 Fresh Lemons-halved
2 Fresh Limes-halved
Salt
Pepper
2oz. Sweet cream butter
1oz Olive Oil
Chopped garlic to taste
Cut catfish fillets into bite sized pieces. Using a covered bowl, mix together catfish pieces, red onions and white onions. Squeeze lemons and limes into bowl, being sure to juice completely. Add salt and pepper to taste, cover, and allow to marinate at least 24 hours in the refrigerator, stirring occasionally.
Heat olive oil and butter in a sauté pan. Place pieces of catfish in pan and brown on all sides. Add red and green pepper and contents of marinade and sauté an additional 30 seconds, or just until warm.
Serve immediately.
