Ceviche Peru
Ingredients (12 people):
2 kg fresh fish without bones
10 limes
6 lemons
6 red onions
8 cloves of garlic, minced
3 celery stalks, finely chopped
12 sweet potatos, cooked
6 corn on the cob, cooked
tabasco sauce, a few drops
3 tsp fresh coriander, finely chopped
Preparation:
Distribute fish pieces of approximately 1 inch in a flat
container. Mix lime juice, lemon juice, garlic, celery, coriander and tabasco and pour
over fish to almost cover. Let marinate for half an hour.
Serve on plates with a salad leaf, a sweet potato, half a
corn on the cob, and something green or red to garnish.
