Siam Ceviche

This ceviche is light and healthy with a really fresh taste. Important: When marinating your tuna, be absolutely sure it is completely covered with lime juice.
| 1/2 pound | fresh tuna, cut into bite size pieces | 225g |
| 1 cup | fresh lime juice | 250ml |
| 1 | medium red onion, thinly sliced | 1 |
| 2 | medium tomatoes, chopped | 2 |
| 1 tablespoon | grated fresh ginger | 15ml |
| 1/2 cup | A Taste of Thai Lite Coconut Milk | 120ml |
| 1/4 cup | fresh cilantro | 60ml |
| Marinate tuna in lime juice in the refrigerator for two hours. |
| After marinating, drain off excess lime juice. |
| In a large mixing bowl, place tuna, red onion, tomato, ginger, Lite Coconut Milk, cilantro, salt and pepper. Toss together gently. |
| Add salt and pepper, to taste. |
| Serve cold. |
