Siam Ceviche

This ceviche is light and healthy with a really fresh taste. Important: When marinating your tuna, be absolutely sure it is completely covered with lime juice.

1/2 pound fresh tuna, cut into bite size pieces 225g
1 cup fresh lime juice 250ml
1 medium red onion, thinly sliced 1
2 medium tomatoes, chopped 2
1 tablespoon grated fresh ginger 15ml
1/2 cup A Taste of Thai Lite Coconut Milk 120ml
1/4 cup fresh cilantro 60ml

Marinate tuna in lime juice in the refrigerator for two hours.
After marinating, drain off excess lime juice.
In a large mixing bowl, place tuna, red onion, tomato, ginger, Lite Coconut Milk, cilantro, salt and pepper. Toss together gently.
Add salt and pepper, to taste.
Serve cold.
